"I Like Food, Food Tastes Good: In the Kitchen with your Favorite Bands" is the name of a cookbook I received from winning a contest that Ari from Baking and Books held on her fantastic food blog. If you have yet to check out Baking and Books- I highly suggest you do. Ari holds contests quite frequently, and her posts are always thoughtful and often hilarious and are accompanied by some beautiful pictures.
I just received this wacky cookbook in the mail and decided I had to try something out of it. There are some great recipes actually- and all of them are fairly simple. It is also entertaining to read all the artist bio's the cookbook author (Kara Zuaro) put together.
I decided to take the recipe for sweet potato and mango chicken quesadillas and modify it a bit. Basically, I omitted the tortillas and made a deconstructed quesadilla:
There is a layer of sauteed sweet potatoes with cumin and chili powder on the bottom. Then a layer of chicken with cumin. Then a layer of monterey jack cheese. Then a generous sprinkling of mango pico de gallo (tomato, onion, jalapeno, mango, and lime juice). Then, as a lovely and tasty garnish, sliced avocado. I also added some sour cream to the top of mine, after taking this photo.
When I look at this picture and think about the layers, I think "what an odd combination". But it actually all works very well. The mix of quesadilla flavors with the sweet potatoes is great. The perfect balance for all those salty/sweet cravers. I love the mango. Mixed in a pico de gallo and served with this dish, the mango is perfect. In fact, it really soaks up the tang of the lime juice and adds tartness where the sweet potato is sweet and the jalapeno gives it a great kick. I highly suggest serving this dish with some hot sauce to make the tastes even more complex. I don't know that I would actually want this in a tortilla. Something about tortillas and sweet potatoes turns me off- I think it is both the texture and the thought of so much starch in one bite!
