Protein

Currently, I am training to run a marathon, and Andy is working to get into better shape. Thus, Andy is inspired to read many websites, articles, and magazines devoted to health and wellness. Some of the things I dismiss as crap, but some of them provide great protein-packed (but still tasty) recipes. So, once in awhile, I humor him and make one of the dishes recommended by Men's Health.

This week, I made zucchini cakes:

A very simple mixture of onion, garlic, 2 medium grated zucchinis, parsley, egg, and salt and pepper. The original recipe also called for rolled oats, but, I substitute with a handful of breadcrumbs. I also put three egg beaters into the mix, to add a lot of protein, but using two would be enough to hold the pancakes together while still adding protein value. Then I cooked them in a little olive oil- about 4 minutes on each side.

To accompany the cakes, I made tilapia with red sauce:

Two tilapia filets, seasoned with salt and pepper, baked atop a tomato sauce in the oven at 425 degrees for 15 minutes.

The zucchini cakes were very good and very filling. All the tastes worked best in one bite- a little bit of fish, a nice chunk of the zucchini cake, and a good smearing of garlicky tomato sauce. Now hopefully, all this protein will make running a marathon a breeze!
