Any chance I could nab the recipe? It looks gorgeous...


no problem michelle! here it's hard to mess up so don't be too concerned with measuring, and you can really use any veggies that you have one hand!

Minestrone Soup

l 32 oz. chicken stock
l lb. ground turkey
l large onion chopped
1/2 cup green beans
1/2 cup carrots
1/2 cup zucchini
2 handfuls spinach
l can kidney beans with the juice
l can diced tomatoes(Mexican flavor)
l cup pasta
l tsp. oregano & garlic
l l/2 tsp basil
3 bay leaves

Saute onion and turkey. Add garlic and seasonings. Add stock. Add hard vegetables (green beans and carrots) and simmer for about 25-30 minutes. Then add pasta and soft veggies (kidney beans, zucchini, tomatoes) and simmer for an additional 15 minutes. Throw in the handfuls of spinach a couple minutes before serving, and that's it!
