My mom is a master soup (and pie) maker. Thankfully, I could live off just soup and a good hunk of bread for every meal so she tested out many different kinds of soups and stews on me when I was young. Besides her chicken soup (which really warms the soul!), my favorite is her turkey minestrone. It combines all of my favorite veggies and flavors into one hearty and colorful soup.

Besides the veggies and pasta you see above, spinach, onions, garlic, plum tomatoes, kidney beans, and ground turkey play a role in the best soup ever:
Andy and I ate our bowls (at least 2 each) with a veggie burger on a great sprouted grain bun. Perfect for dunking, and perfect to either bring for lunch the next day, or to freeze for later!
