no problem michelle! here it is...it's hard to mess up so don't be too concerned with measuring, and you can really use any veggies that you have one hand!

Minestrone Soup

l 32 oz. chicken stock
l lb. ground turkey
l large onion chopped
1/2 cup green beans
1/2 cup carrots
1/2 cup zucchini
2 handfuls spinach
l can kidney beans with the juice
l can diced tomatoes(Mexican flavor)
l cup pasta
l tsp. oregano & garlic
l l/2 tsp basil
3 bay leaves

Saute onion and turkey. Add garlic and seasonings. Add stock. Add hard vegetables (green beans and carrots) and simmer for about 25-30 minutes. Then add pasta and soft veggies (kidney beans, zucchini, tomatoes) and simmer for an additional 15 minutes. Throw in the handfuls of spinach a couple minutes before serving, and that's it!
